Ingredients
- 1/2 c. softened butter or possibly oil
- 2 large eggs
- 1 c. mashed bananas
- 1/2 c. honey
- 1/4 c. yogurt, plain or possibly banana flavored
- 1 teaspoon baking soda
- 1 1/2 c. whole wheat flour (pastry flour, if available)
- 1 c. rolled oats
- 1 c. minced nuts (optional)
Directions
- Put together butter or possibly oil, large eggs, bananas, and honey. Mix together yogurt and baking soda and add in to first mix. Cream well by hand or possibly with mixer. Add in flour, mixing just till blended. Stir in oats and nuts.Fill greased muffin cups 2/3 full. Bake at 375 degrees for 20 min. Remove from pan and cool on wire rack. Makes 18 muffins.
