Ingredients

  • 4 c. oatbran
  • 4 c. all-purpose flour
  • 3 c. rolled oats
  • 3 c. raisins
  • 2 c. packed brown sugar
  • 1 c. minced dry apricots
  • 1/4 c. baking pwdr
  • 4 tsp cinnamon
  • 2 tsp salt
  •     For One Batch-10 muffins
  • 3 1/2 c. oatbran muffin mix
  • 1 x egg
  • 1 1/4 c. lowfat milk
  • 1/4 c. melted butter
  • 2 Tbsp. coarsely grated orange
  •     rind

Directions

  1. In large bowl, or possibly air-tight container, thoroughly combine oatbran, flour, rolled oats, sugar, raisins, apricots, baking pwdr, cinnamon, and salt.
  2. Store in cold, dry place for up to 4 weeks.
  3. TO MAKE ONE BATCH: Measuremuffin mix into one large bowl. In separate bowl, beat egg; stir in lowfat milk, butter and orange rind. Stir into muffin mix just till combined. Spoon into large greased or possibly paper lined muffin c., filling to top. Bake in 375F oven for about 25 min, or possibly till tops are hard to the touch.
