Nyonya style fish achar

crispy fried dish soaked in a vinaigrette gravy.

Goes Well With: a side dish with rice

Ingredients

  • 10 sardine fish (or other firm fish) - de-gut and keep the head intact.
  • 1 inch fresh turmeric/kunyit - smashed
  • 10 shallots - remove skin
  • 1 inch ginger - cut into stripes
  • 6-7 birds/red chillies (slice red chillies)
  • 1/2 cup vinegar
  • 6-8 tbsp sugar
  • Coriander leaves (optional)
  • Salt to taste
  • Oil - as needed

Directions

  1. Rub fish with salt.
  2. Deep fry and remove.
  3. Leave about 3 tbsp of oil in the same pan.
  4. Fry turmeric and remove (we will not need it)
  5. Fry shallots, ginger and chillies; 2-3 mins.
  6. Remove and keep aside.
  7. Pour vinegar, sugar and a bit of salt.
  8. Let it simmer to thicken.
  9. Add fish with fried shallots, ginger and chillies. .
  10. Stir all in.
  11. Off the heat and combine coriander leaves.
  12. Leave achar in the pan for at least an hour.
  13. Remove to serve.
