%20but%20I%20can%20see%20how%20starting%20with%2017%20year%20old%20Jamaican%20rum,%20as%20Bergeron%20did,%20makes%20a%20Mai%20Tai%20a%20form%20of%20alchemy%20all%20it%E2%80%99s%20own.%20But%20Bergeron%20managed%20to%20take%20that%20rum%20and%20a%20few%20other%20ingredients%20and%20combine%20them%20in%20a%20way%20that%20is%20way%20more%20than%20expert%20balance%20and%20ratio.%20So%20I%E2%80%99ll%20let%20him%20give%20the%20chemical%20equation%20in%20his%20own%20words.%20The%20formula%20picks%20up%20once%20he%20had%20that%20rum%20in%20his%20beaker,%20err%20I%20mean%20shaker.%3C/p%3E%3Cp%3E%E2%80%9CI%20took%20a%20fresh%20lime,%20added%20some%20orange%20cura%C3%A7ao%20from%20Holland,%20a%20dash%20of%20rock%20candy%20syrup,%20and%20a%20dollop%20of%20French%20orgeat,%20for%20its%20subtle%20almond%20flavor.%20A%20generous%20amount%20of%20shaved%20ice%20and%20vigorous%20shaking%20by%20hand%20produced%20the%20marriage%20I%20was%20after...%20I%20gave%20two%20of%20them%20to%20Ham%20and%20Carrie%20Guild,%20friends%20from%20Tahiti....%20Carrie%20took%20one%20sip%20and%20said,%20'Mai%20tai%20--%20roa%20ae!'%20%20Which%20in%20Tahitian%20this%20means%20'Out%20of%20this%20world%20--%20the%20best!'%22%3C/p%3E%3Cp%3EThe%20Mai%20Tai%20I%20enjoyed%20at%20The%20Kona%20Royal%20was%20indeed%20quite%20good.%20It%20was%20served%20in%20the%20wrong%20glass%20and%20suffered%20a%20tad%20because%20good%20rum%20(not%20excellent%20rum)%20was%20floated%20on%20top%20rather%20than%20shaken.%20It%20also%20lacked%20that%20subtle%20hint%20of%20vanilla,%20which%20comes%20from%20using%20rock%20candy%20syrup.%20I%20suspect%20a%20standard%20simple%20syrup%20hit%20the%20mix%20and%20perhaps%20a%20tad%20too%20much%20of%20it.%20But%20nobody%20in%20the%20room%20(or%20even%20at%20my%20table)%20seemed%20to%20mind.%20Because%20the%20sun%20was%20setting%20over%20Kailua%20Bay%20and%20enough%20attention%20was%20paid%20to%20quality,%20balance%20and%20ratio%20to%20make%20even%20this%20old%20pirate%20quite%20happy%20indeed.%3C/p%3E%3Cp%3EWhich%20got%20me%20thinking%20about%20the%20science%20of%20matter%20that%20makes%20a%20good%20and%20proper%20Mai%20Tai%20possible.%20I%20think%20that%20a%20dash%20of%20paradise%20may%20actually%20be%20the%20ingredient%20so%20often%20lacking%20in%20too%20many%20of%20the%20bad%20Mai%20Tais%20I%20have%20suffered%20through%20in%20the%20past.%20Because%20this%20compound%20may%20be%20a%20California%20classic%20with%20a%20Tahitian%20name,%20but%20somehow%20the%20Mai%20Tai%20and%20Kona%20feel%20just%20right%20together.%3C/p%3E%3Cp%3Etropical%20fruit%20and/or%20blossoms%20for%20garnish%3C/p%3E%3Cp%3EShake%20all%20the%20liquid%20ingredients%20together%20vigorously%20with%20cracked%20ice.%20Strain%20into%20an%20ice-filled%20collins%20glass.%20Garnish%20as%20desired.%3C/p%3E%3Cp%3ENote:%20Simple%20syrup%20and%202%20drops%20of%20vanilla%20may%20be%20substituted%20for%20the%20rock%20candy%20syrup.%3C/p%3E){kind=link}
