  • 1 1/2 lb extra-lean grnd beef
  • 1/2 lb extra-lean grnd pork
  • 1 x egg
  • 1 c. mashed potatoes
  • 1/2 c. lowfat milk
  • 2 tsp seasoning salt
  • 1/4 tsp grnd cloves
  • 1/4 tsp allspice
  • 1/4 tsp grnd ginger
  • 1/4 tsp freshly-grnd black pepper
  • 1/4 tsp nutmeg
  • 1/2 tsp brown sugar
  • 1/2 tsp brown sugar
  • 1 c. beef broth
  • 1/2 c. heavy cream
  • 1/2 c. minced parsely

Directions

  1. Throughly combine all ingredients except flour, beef broth, heavy cream and minced parsley. Blend well and shape into about 24 (1 1/2-inch) meatballs. Roll lightly in flour. Place on rack of broiler pan in preheated 400 degree oven for 20 min. Drain. Carefully remove meatballs to hot platter.
  2. Meanwhile, stir heavy cream into broth in crockpot; mix till smooth. Cook on HIGH till warm; add in the meatballs and hold on LOW till ready to serve. Just before serving sprinkle with the minced parsley.
  3. This recipe yields 8 servings.
