New York Cheese Cake

Ingredients

  • 1 7/8 c. graham cracker crumbs
  • 1/2 c. (1 stick) butter, melted
  • 1 c. sugar, divided
  • 2 lbs. cream cheese
  • 2 lg. large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 2 T cornstarch
  • 1 c. lowfat sour cream

Directions

  1. Preheat oven to 450 degrees. In a bowl, place graham cracker crumbs, butter, and 2 tbsp sugar; blend well. Press mix into bottom and sides of a greased 9 inch spring form pan. Refrigerate in freezer while preparing filling. In mixer bowl, beat cream cheese and remaining sugar till smooth and light. Beat in large eggs, vanilla, cornstarch, just till blended. Stir in lowfat sour cream. Pour mix into prepared crust and bake for 10 min at 450 degrees, reduce temperature to 200 degrees and bake for 45 min. Turn off oven. Allow to cool with the door slightly opened for 3 hrs. Remove sides from pan.1. Sprinkle top with graham cracker crumbs. 2. Commercial pie fillings, cherry, blueberry, etc. 3. Fresh strawberries, halved and mixed with commercial strawberry glaze.
