New Years Day Green Bean Casserole Recipe

Ingredients

  • 1 lb green beans (fresh or possibly frzn)
  • 1 x onion, minced
  • 1 x clove garlic, chopped
  • 1/4 lb bacon, sliced
  • 1 tsp dill seed
  • 1 tsp salt (taste the sauce to make sure you do not add in too much)
  • 1 tsp pepper, fresh coarse grnd
  • 1/2 tsp cayenne pepper
  • 3 Tbsp. flour, white
  • 1 c. lowfat milk
  • 1 c. almonds, blanched slivered or possibly sliced (sufficient to cover top)

Directions

  1. Cut bacon into 1/2 inch. Fry slowly in a large sauce pan till lightly browned, stirring to separate. Remove bacon with a slotted spoon and drain on a paper towel, reserving drippings.
  2. Saute/fry onion and garlic in sauce pan in 1 Tbsp. bacon drippings till lightly browned. Add in beans, bacon, 3 c. water and dill seed. Bring to a boil and then simmer, covered for 30 min. Drain, reserving bean cooking water; set beans aside.
  3. In the sauce pan, heat 3 Tbsp. bacon drippings (use butter or possibly veg. oil if there isn't sufficient to make 3 Tbsp.) to medium low, add in flour and stir for 1 minute. Remove from heat, add in a little of the lowfat milk, then return to heat and stir till thickened.
  4. Gradually add in the rest of the lowfat milk and the bean cooking water. Stir occasionally and let the sauce thicken lightly between additions.
  5. Add in the salt, pepper and cayenne. Sauce should be white sauce-thick.
  6. In a large casserole, add in layers of sauce and beans till used up. Sprinkle almonds on top and bake, uncovered at 350 degrees for 30 min or possibly till lightly browned and bubbly.
