  • 1/2 cup cooked, slightly mashed blacked eyes peas (See Notes)
  • 1 medium sized potato, chopped into small cubes
  • 2 tsp olive oil
  • 2 eggs
  • a dash of milk
  • salt to taste
  • 1/2 tsp red chilli flakes
  • few sprigs of chopped coriander
  • 1 scallion thinly sliced - both white and green parts
  • grated cheese - for topping
