New Potatoes In White Wine Recipe

Ingredients

  • 1 1/2 lb Small white new potatoes or possibly small Finnish potatoes
  • 2 c. Dry white wine
  • 1/2 c. White vinegar
  • 1 Tbsp. Unsalted butter
  • 1 tsp Finely chopped garlic
  • 1/4 c. Finely chopped shallots
  • 1 tsp Salt
  • 1/2 tsp Freshly grnd black pepper
  • 1/4 c. Minced parsley
  • 1 Tbsp. Minced fresh tarragon -Or possibly- 1 tsp. dry

Directions

  1. Rinse unpeeled potatoes under cool water and place in 2-qt pan. Add in wine, vinegar, butter, garlic, shallots, salt and pepper. (If using dry tarragon, add in to wine and vinegar mix.) Cover. Bring to boil over high heat. Reduce heat to low and simmer till potatoes are tender, about 15 min.
  2. Using slotted spoon, remove potatoes to serving platter and keep hot in oven at 200 degrees. Cook wine-vinegar mix over high heat, reducing by 1/3. Add in parsley and fresh tarragon. Remove potatoes from oven and pour sauce over top.
  3. Makes 4 servings.
