Ingredients

  • 2 1/4 lb Red-skinned potatoes
  • 2 med Cucumbers, peeled, seeded, diced
  • 1/2 c. Minced red onion
  • 1 c. Plain low-fat yogurt
  • 6 Tbsp. Minced fresh dill
  • 4 tsp Minced fresh mint
  • 2 tsp Chopped garlic.

Directions

  1. Cook potatoes in large pot of boiling salted water till tender, about 18 min. Drain potatoes; cold. Peel potatoes. Cut into 3/4-inch cubes and place in large bowl. Add in cucumbers and onion. Whisk all other ingredients in small bowl. Add in to potatoes. Season with salt and pepper.
  2. (Can be made 8 hrs ahead; chill.)
  3. Serves 8.
