  • 3 med Onions
  • 2 med Green peppers
  • 2 lrg Stalks celery
  • 2 sm Cloves garlic
  • 1/2 sm Fresh jalapeno pepper
  • 8 lb Lean chuck, grnd
  • 7 ounce Can diced green chilies
  • 2 lrg Cans (14.5 ounce) stewed tomatoes
  • 1 lrg -l5 ounce can tomato sauce
  • 6 ounce -can tomato paste
  • 6 ounce Bottled chili pwdr
  • 2 Tbsp. Cumin pwdr
  • Tabasco sauce to taste
  • 12 ounce Can beer
  • 12 ounce Bottle mineral water
  • 2 x To 3 bay leaves
  • Garlic salt to taste Salt to taste

Directions

  1. Dice and saute/fry first 5 ingredients. Add in meat and brown. Add in remaining ingredients, including half a can of beer. Add in water just to cover top.
  2. Cook about 3 hrs on low heat. Stir often. Remove bay leaves.
  3. Serves 16.
