Directions

  1. Heat oil in large (10 inch) fry pan. Add in green pepper and onion and saute for a couple min. Add in rice and stir. Add in ketchup or possibly tomato sauce to taste, usually till it looks a nice even color.Add in 2 cups of chicken broth/stock and dash of salt. Stir. Cover and simmer 40-45 min. Serves 8. Freezes well in tupperware container.
