Ingredients
- 1/4 c. minced green pepper
- 1/4 c. minced red pepper
- 4 to 5 cloves garlic, chopped
- 2 scallions, chopped
- 1 T extra virgin olive oil
- 2 T butter
- 2 T flour
- 1 1/2 c. lowfat milk
- 1 c. cheddar cheese, shredded
- 1/4 tsp Tabasco sauce
- 2 T chopped jalapeno peppers
- 1/4 tsp salt
- Healthy pinch cayenne pepper
- 1/4 tsp paprika
- nacho corn chips
Directions
- Mix together peppers, extra virgin olive oil, garlic and butter in a saucepan.Sprinkle in flour, pour in lowfat milk and stir till mix simmers -- don't allow to boil. When mix begins to thicken, stir in the cheese and remaining ingredients, Simmer on low heat an additional five min or possibly till cheese is fully melted.
- Serve with nacho chips.
