- 1 tablespoon olive oil
- 8 ounces naan (I use Stonefire Grill Whole Grain Naan), cut into bite-sized pieces
- 1/4 cup white balsamic vinegar
- 2 tablespoons lemon-infused olive oil (I use Calivirgin Lusty Lemon)
- 2 cloves garlic, minced
- salt and pepper
- 2 pints grape tomatoes, halved
- 8-ounce tub of mini mozzarella balls, drained
- 1 cup cannellini beans, rinsed
- 1/4 cup sliced green onion

%3C/p%3E%3Cp%3EI%20love%20meal%20salads%20and%20am%20always%20looking%20for%20new%20ideas%20to%20make%20them%20interesting.%20Lately%20I've%20been%20throwing%20savory%20granola%20into%20my%20salads%20for%20a%20little%20extra%20crunch:%20highly%20recommended.%20For%20this%20riff%20on%20my%20favorite%20summer%20salad,%20panzanella%20(Italian%20bread%20salad),%20I've%20kicked%20it%20up%20with%20lightly%20fried%20naan.%3C/p%3E%3Cp%3EYes,%20naan!%3C/p%3E%3Cp%3EI'm%20a%20naan%20junkie.%20I%20think%20the%20wait%20staff%20at%20my%20favorite%20Indian%20restaurant%20probably%20cringes%20when%20I%20arrive%20for%20the%20lunch%20buffet%20--%20I%20bet%20they%20lose%20money%20that%20day%20based%20solely%20on%20the%20amount%20of%20naan%20that%20I%20manage%20to%20scarf%20down%20in%20one%20sitting.%3C/p%3E%3Cp%3EI%20need%20to%20try%20making%20naan%20at%20home,%20that's%20for%20sure%20(stay%20tuned).%20Until%20then,%20I'm%20a%20big%20fan%20of%20Stonefire%20Grill's%20packaged%20naan,%20because%20they%20use%20all-natural%20ingredients%20like%20whole%20grain%20flour,%20buttermilk%20and%20ghee,%20and%20no%20preservatives:%20booyah!%20Right%20in%20line%20with%20my%20stealthy%20homemaking%20mantra%20to%20not%20eat%20processed%20crap.%3C/p%3E%3Cp%3EOne%20of%20my%20other%20favorite%20things%20about%20this%20easy-to-prepare%20naan%20panzanella%20is%20the%20simple%20dressing,%20made%20amazingly%20fresh%20and%20tasty%20with%20lemon-infused%20olive%20oil.%20It%20adds%20just%20the%20right%20amount%20of%20bright%20summery%20zing%20that%20you%20can%20really%20taste.%20I%20was%20recently%20turned%20on%20to%20the%20lemon%20olive%20oil%20from%20Calivirgin%20and%20it%20is%20ah-mazing!%20However,%20if%20you%20can't%20find%20any%20lemony%20olive%20oil,%20you%20can%20simply%20use%20regular%20olive%20oil%20and%20add%20a%20bit%20of%20freshly%20squeezed%20lemon%20juice%20to%20your%20dressing.%20Just%20please%20don't%20skip%20the%20lemon%20entirely%20--%20you'll%20miss%20out%20on%20the%20brightness.%3C/p%3E%3Cp%3EThis%20naan%20panzanella%20is%20plenty%20filling%20and%20full%20of%20protein,%20as%20it%20is%20loaded%20with%20cannellini%20beans.%20But%20if%20you%20are%20a%20meatasaurus%20like%20me%20and%20prefer%20a%20less%20meatless%20option,%20feel%20free%20to%20add%20some%20grilled%20chicken%20breast.%3C/p%3E%3Cp%3EAre%20you%20a%20meal%20salad%20fan,%20too?%20Or%20even%20just%20a%20naan%20maniac?%20Leave%20a%20comment:%20The%20Ninj%20wants%20to%20know.%3C/p%3E%3Cp%3EDisclosure:%20While%20I%20have%20been%20given%20product%20samples%20in%20the%3C/p%3E%3Cp%3Epast%20from%20both%20Stonefire%20Grill%20and%20Calivirgin,%20%20I%20did%20not%20develop%20this%3C/p%3E%3Cp%3Erecipe%20for%20them,%20nor%20have%20they%20sponsored%20this%20post%20or%20compensated%20me%20in%3C/p%3E%3Cp%3Eany%20way.%20Heck,%20they're%20not%20even%20aware%20I%20wrote%20it!%20All%20thoughts%20and%3C/p%3E%3Cp%3Eopinions%20are%20my%20own%20and%20simply%20reflect%20how%20I%20cook%20and%20eat.%3C/p%3E%3Cp%3ENaan%20Panzanella%20Salad%20(inspired%20by%20a%20recipe%20in%20Good%20Housekeeping)%3C/p%3E%3Cp%3EIf%20you're%20unable%20to%20locate%20any%20lemon-infused%20olive%20oil%20for%20the%20dressing,%20simply%20substitute%202%20tablespoons%20plain%20olive%20oil%20and%20a%20squeeze%20of%20fresh%20lemon%20juice.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EHeat%201%20tablespoon%20olive%20oil%20in%20a%20large%20skillet%20over%20medium-high%20heat.%20Add%20the%20naan%20and%20cook%20about%205%20minutes%20or%20until%20lightly%20browned,%20stirring%20often.%3C/p%3E%3Cp%3EMeanwhile,%20in%20a%20large%20bowl,%20whisk%20together%20the%20vinegar,%20lemon%20oil,%20garlic%20and%20salt%20and%20pepper%20to%20taste.%20Add%20the%20tomatoes,%20cheese,%20beans,%20green%20onion%20and%20naan;%20toss%20to%20coat.%20Serves%203-4.%3C/p%3E){kind=link}
