My all purpose marinade made in Québec Recipe

An all purpose marinade you can use to give wonderful flavour to tofu, chicken, beef, pork, veal, wild meat (bison, caribou, deer, etc.) and vegetables before cooking on the BBQ.

  • 1/2 cup tamari (a lighter, less salty soya sauce)
  • 1/4 cup olive oil
  • 2 - 3 garlic cloves, chopped
  • 1 - 2" piece of fresh ginger, grated
  • 2 tbsp herbes salées du Bas-du-Fleuve from Québec (also available at: [email protected])
  • or you can use salted fine herbs mixture of your choice
  • 1 tsp onion powder or any other spices (to your taste)

Directions

  1. Mix all the ingredients in a food processor. Use the marinade to flavour tofu, meats, game and vegetables in a plastic bag or in a plastic container before cooking them.
  2. Depending on the quantity of meat or vegetables used, you can use half of the recipe and refrigerate the other half for future use within the same week or two.
