  • 2 c. Cooked AM 7 Bean & Barley
  • 1 c. Plain yogurt
  • 1 c. Mushrooms, sliced
  • 1 1/2 c. Minced onion
  • 2 x Garlic cloves, crushed
  • 3 Tbsp. Vegetable oil
  • 3 Tbsp. AM Whole Wheat Flour
  • 1/2 tsp Sea salt (optional)
  • 1/2 tsp Black pepper (optional)
  • 4 Tbsp. Tamari sauce
  • 6 c. Favorite steamed vegetables

Directions

  1. While beans and barley are still warm, drain well and toss with the yogurt.
  2. Heat the oil in a sauce pan, add in onion, garlic, mushrooms and seasonings.
  3. After 5 min, stir in the flour. Stir and cook 5 more min. Add in 2 c. boiling water and 2 tbsp. tamari. Cook, stirring frequently over very low heat for 8-10 min or possibly till thickened and smooth. Combine everything in a large casserole and add in 2 more tbsp. tamari. Bake, covered, 45-50 min at 350 F.
