Ingredients
- 2 cups flour
- ½ tsp. baking powder
- ½ tsp. baking soda
- ¼ tsp. salt
- 2 eggs
- ¼ cup vegetable oil
- 1 tsp. vanilla
- ¾ cup milk
- ½ cup sugar
- ½ tsp. cinnamon
- For the Cinnamon Sugar Topping:
- 2 tablespoons sugar
- 1 tablespoon cinnamon
- Simple Sugar:
- ½ cup Black Raspberry Sparkling Ice
- ½ cup sugar
Directions
- Combine the Blackberry Ice drink with the sugar and bring to a boil while gently stirring.
- Turn the heat off and let the mixture sit for approximately 30 minutes.
- Preheat Oven 375 degrees:
- Combine all of the dry ingredients in a bowl.
- Combine the eggs, vanilla, milk and vegetable oil and gently beat with a fork, until the eggs are incorporated.
- Add the liquid ingredients to the dry ingredients while stirring.
- Butter the muffin tins. Fill the tins with the batter half-way. Top each muffin with the cinnamon sugar.
- Bake 20 - 25 minutes or until the toothpick test comes out clean.
- Serve the muffins with cream cheese or butter and drizzle the syrup over the muffin.
