  • 2 c. Lowfat sour cream
  • 2 tsp Salt
  • 1/4 tsp Black pepper
  • 1 Tbsp. Sugar
  • 1 c. Minced scallions -- (about 3 )
  • 1/2 c. Bacon bits
  • 3 c. (12oz)
  • 3 c. Cooked rice -- divided
  •     Shredded Cheddar cheese

Directions

  1. Preheat the oven to 425 degrees. In a medium bowl, blend the lowfat sour cream, salt, pepper, and sugar by hand. In a large bowl, combine the scallions, bacon bits, and cheese. Place one third of the rice on the bottom of the 2-qt casserole dish which has been coated with non stick vegetable spray.
  2. Layer one third of the lowfat sour cream mix over the rice, then one third of the cheese. Repeat the layers, ending with a layer of cheese mix on top. Bake for 30 min, or possibly till bubbly and brown around the edges.
