Ingredients
- 2 c. Lowfat sour cream
- 2 tsp Salt
- 1/4 tsp Black pepper
- 1 Tbsp. Sugar
- 1 c. Minced scallions -- (about 3 )
- 1/2 c. Bacon bits
- 3 c. (12oz)
- 3 c. Cooked rice -- divided
- Â Â Shredded Cheddar cheese
Directions
- Preheat the oven to 425 degrees. In a medium bowl, blend the lowfat sour cream, salt, pepper, and sugar by hand. In a large bowl, combine the scallions, bacon bits, and cheese. Place one third of the rice on the bottom of the 2-qt casserole dish which has been coated with non stick vegetable spray.
- Layer one third of the lowfat sour cream mix over the rice, then one third of the cheese. Repeat the layers, ending with a layer of cheese mix on top. Bake for 30 min, or possibly till bubbly and brown around the edges.
