  • 2 Tbsp. Extra virgin olive oil
  • 2 lb Chicken thighs -- or possibly
  •     Drumsticks(8 pieces)
  • 1 med Onion -- minced (about 1 C)
  • 1 can (28oz)
  •     Minced
  • 2 Tbsp. Tomato paste
  • 1 Tbsp. Dry parsley -- (flakes)
  • 2 tsp Garlic pwdr
  • 1/4 tsp Crushed red pepper
  • 2 can White beans -- (cannellini)
  •     Liquid removed
  •     Tomatoes -- (whole),

Directions

  1. Heat the extra virgin olive oil over medium heat in a large skillet. Brown the chicken for 10 min on each side. Add in the onion and saute/fry for about 2 min; drain excess liquid. In a medium-sized bowl, combine the remaining ingredients and add in to the chicken. Reduce the heat to low and simmer for 20 min, till the chicken is tender and cooked through.
