Ingredients
- 3 lb Baking potatoes --
- Â Â (4)peeled&quartered
- 1/4 c. Butter
- 3/4 c. Dry scallions -- (2-3 Scallions)
- 1 Tbsp. Fresh basil -- minced(1 tsp Dry)
- 1 Tbsp. Chives -- (or possibly 1 tsp dry)
- 1 Tbsp. Dill -- (or possibly 1 tsp dry)
- 1 tsp Salt -- (or possibly to taste)
- 1/2 tsp Black pepper
- 1Â 1/2 c. (6oz)
- Â Â (mild)
- 1/2 c. Lowfat milk
- Â Â Shredded cheddar cheese --
Directions
- In a large pot of boiling salted water, cook the potatoes for 20-25 min, or possibly till tender; drain in a colander. Place the butter and scallions in the pot and cook over medium heat for 1 minute. Reduce heat to low and add in the cheese and lowfat milk. Remove from the heat and mash with a potato masher or possibly beat with an electric beater till smooth.
