Moving Forward, Plov-ing Ahead Recipe

Ingredients

  • 1lb (1/2 kg) cooked/roasted lamb, cut into 1 inch (2cm) chunks or pieces
  • 1 large onion, diced
  • 2-3 large carrots, scraped and diced
  • 1/2 head garlic, finely chopped
  • 1 tsp each of cumin and coriander seeds, crushed lightly in a mortar
  • 1 tsp hot paprika powder or Aleppo pepper
  • (optional) 1 pinch saffron threads
  • salt and black pepper
  • olive oil
  • 1 cup of long grain rice (basmati works well, as do long grain domestic varieties)
  • 1.5 cups good lamb or chicken stock
