Mouthwatering Indian Dishes

Shahi means royal and as the name suggest this is a royal paneer dish. Shahi paneer is a typical North Indian dish eaten with roti.
Shahi paneer is preparation of paneer pieces in a thick, creamy and spicy gravy prepared in tomato, onion and cashewnuts paste.

Ingredients

  • Paneer (Cottage cheese) - 1 1/2 cups, Soak in warm water for 15mts
  • Onion - 1 very large
  • Tomato - 1 large
  • Green chili-ginger paste - 2 tsps
  • Cardamom (Black) - 1
  • Bay leaf - 1
  • Cinnamon stick - 1
  • Cashew nuts - 8
  • Tumeric powder - 1/2 tsp
  • yogurt - 1/4 cup
  • Malai - 2 tbsps
  • Oil - 2 tbsp
  • Ghee - 2 tbsp
  • Coriander leaves - 3 tbsp
  • Salt to taste
  • Dry roast
  • Coriander seeds - 1 tpsp
  • Green cardamoms - 3
  • Black peppercorns - 6
  • Clove - 1

Directions

  1. Step 1
  2. Cut the paneer into half inch wide and one inch long pieces. Boil the onions in quarter cup of water. Drain and allow to cool. Grind to a fine paste.
  3. Step 2
  4. Blanch the onions and grind to make a paste. If using tomato, blanch it and grind to a paste. Set aside.
  5. Step 3
  6. Grind cashew nuts along with the milk to a smooth paste and set aside.

  8. Heat the oil in a Wonderchef Diamond Wok, add the cloves, peppercorns, cinnamon and bay leaf and sauté till fragrant.

  10. Add ginger-green chili paste, turmeric powder and kasuri methi and saute for 4 mts. Add the tomato puree and cook for 6-7 mts.

  12. Add the cashewnut paste and sauté for another two minutes. Add the yogurt and sauté till the water from the yogurt gets absorbed.

  14. Add paneer cubes and mix gently. Simmer for 8-10 minutes and add the ground garam masala powder and mix. Finally add the fresh cream and mix. Turn off flame and allow the curry to rest for 15 mts.

  16. Remove to a serving bowl. Garnish with fresh coriander leaves and serve warm with kulcha, butter naan, roti or pulao.
