Ingredients

  • 1/2 lb Fresh cheese-filled tortellini uncooked
  • 2 Tbsp. Butter divided
  • 1/4 lb Morel mushrooms quartered
  • 1 Tbsp. Chopped shallots
  • 1 ounce Prosciutto julienned
  • 1 tsp Fresh minced thyme
  • 1/2 c. Light stock
  •     Salt to taste
  •     Freshly-grnd black pepper to taste

Directions

  1. Place the pasta in boiling water.
  2. Heat 1 Tbsp. of butter in a medium pan, add in the mushrooms and cook for 3 min. Add in the shallots, Prosciutto and thyme. Cook for 2 min. Add in the stock, bring to a boil, reduce for 2 min, then stir in the remaining butter.
  3. Remove the pasta from the water, toss in sauce, and season.
  4. This recipe yields 2 entree servings.
