Ingredients

  • 2 cups whole wheat flour
  • 4 cups unbleached all-purpose flour
  • 1 cup cocoa powder
  • 1½ tablespoons granulated yeast, or 2 packets
  • 1 tablespoon kosher salt (increase or decrease to taste)
  • ¼ cup vital wheat gluten
  • 1 cup lukewarm brewed espresso or strong coffee
  • 1¼ cups lukewarm water
  • 4 large eggs
  • ½ cup neutral-flavored oil
  • ¾ cup honey
  • 6 ounces bittersweet chocolate, finely chopped
  • Egg wash (1 egg beaten with 1 tablespoon water) for brushing on top crust
  • Raw sugar for sprinkling on top
