Ingredients
- 4 lrg garlic cloves
- 1/3 c. fresh basil leaves
- 1/3 c. chopped parsley
- 1 lb bunch spinach, stemmed
- 3 med ripe tomatoes
- 1/2 c. parmesan cheese
- 1/2 tsp salt
- 1/2 c. pine nuts
- Â Â freshly grnd black pepper
- Â Â extra virgin olive oil for the pasta
Directions
- Place garlic, basil, parsley and spinach in a blender; work into a uniform paste. Add in tomatoes; process just a few seconds longer. Transfer to a bowl and stir in parmesan, salt and nuts. Serve at room temperature with warm pasta with the extra virgin olive oil.
