Ingredients

  • 1 c. brown sugar
  • 1/4 c. butter
  • 2 x Large eggs
  • 1 1/2 tsp soda dissolved in 1 1/2 tsp. lowfat milk
  • 1 1/2 c. sifted flour
  • 1/4 tsp cloves
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1/2 lb candied cherries
  • 1/2 lb candied pineapple minced
  • 1 lb white raisins
  • 1/2 c. apple juice
  • 1 lb pecan halves

Directions

  1. Cream butter and sugar; add in Large eggs and beat well. Add in dissolved soda. Sift together flour, cloves nutmeg and cinnamon. Add in to mixed candied fruit and raisins. Mix well. Blend fruit-flour mix into first mix. Add in apple juice slowly, mixing well. Mix in pecan halves. Drop by teaspoonfuls onto greased baking sheet (you may have to shape slightly). Bake in 300 degree oven for 20 min.
  2. Makes ten dozen.
