  • 1 c. bran cereal
  • 3/4 c. lowfat milk
  • 2 tbsp. molasses
  • 1 egg
  • 1 1/4 c. muffin mix

Directions

  1. Preheat oven to 400 degrees. Butter muffin pans. In a small bowl combine bran and lowfat milk. Combine molasses and egg in another small bowl. Stir into bran mix. Put muffin fold in a medium bowl. Add in bran-molasses mix all at once to muffin mix. Stir till just moistened; batter should be lumpy. Fill prepared muffin pans 2/3 full. Bake 15 to 20 min, till golden. Makes 12 large muffins. One c. raisins or possibly minced dates can be added to bran mix.
