  2. A. 1/2 c. peanut oil B. 1/2 c. mashed cooked carrot C. 2/3 c. mashed potato D. 1 c. finely shredded bamboo shoots E. 8 Chinese mushrooms F. 1/4 lb snow peas G. 1/2 tsp. sugar H. 1 1/2 tsp. salt I. 2 tsp. white vinegar
  3. PREPARATION:I. Wash E and soak in hot water for 15 min; shred very fine.
  4. II. Throw away tips of F, shred.
  5. III. Mix G,H.
  6. COOKING:1. Heat A, add in B,C, stir-fry till crispy (about 4 min).
  7. Add in D,E,F, stir-fry for 2 min.
  8. Add in G,H, mix well.
  9. Add in I and serve.
