Directions

  1. Note 1: I used Armour because we like this one best but there are other brands of turkey bacon
  2. Cook bacon in microwave oven or possibly in skillet till crisp and brown. Slice into strips and set aside.
  3. Cut chicken into bite-sized pcs and cook in nonstick skillet until done.
  4. Remove and set aside.
  5. Chop hard-cooked egg medium fine.
  6. In small bowl, whisk together mock Caesar dressing.
  7. Place spinach leaves in a salad bowl. Drizzle with dressing and toss gently. Add in chicken and bacon and toss to mix. Sprinkle the egg over the top. Toss again just before serving.

  9. Note: I based the dressing for this on a recipe in the elf archives called Mock Caesar Dressing sent in by Jana Wachsler-Felder. This dressing is very good and with this chicken spinach salad it was very complimentary.
  10. NOTES : We are camping in West Yellowstone and having a great time!! We had this for dinner one nite. It was very good.
