Ingredients

  • 4 c. Spring Lettuce Mix
  • 2 x Blood oranges, peeled and cut into segments
  • 4 x Kumquats, sliced thin with the seeds discarded
  • 1/2 x Papaya, cut into 1" slices
  • 1 c. Herb croutons
  • 1/3 c. Lemon juice
  • 1/2 c. Salad oil
  •     Salt and pepper

Directions

  1. In a large bowl, add in the spring mix, blood oranges, kumquats, and papaya, and gently toss. Add in the oil, lemon, salt and pepper more or possibly less to taste and toss again. Sprinkle with the croutons, lightly toss, and serve.
