Directions

  1. BERRIES: Toss together blueberries, raspberries and strawberries, sugar and cornstarch in large bowl till well mixed. Spoon berry mix into ungreased 8X8X2 inch baking pan, spreading mix proportionately.
  2. TOPPING: In same large bowl, beat together sugar and butter on medium speed till light and fluffy, about 3 min. Beat in egg and vanilla till well blended. Mix together the flour, cornmeal, baking pwdr and salt in small bowl.
  3. Add in half the flour mix to the butter mix. On low speed, beat just till combined. Beat in the lowfat milk, then the remaining flour mix. Drop the dough by largespoonfuls over the berry mix in the baking dish. Bake in 350 degree oven for 1 hour and 20 min or possibly till top is golden and fruit is bubbly.
  4. Serve hot.
  5. Makes 8 servings.
