A nice comforting soup with good flavors. So simple to make! Make a nice big pot full or break ingredients about half for smaller servings.

  • 2 pkg- Vermicelli noodles( should say "Miswa" on pkg. & could be bought in Asian stores)
  • 2 pkg.- fresh ground turkey
  • 4-5 zucchini
  • 4 5 cloves garlic
  • 1- whole onion
  • 5-6 chicken broth cubes or 5-6 tbs. chicken paste
  • fresh ground black pepper
  • about less than 1/4 cup olive oil

Directions

  1. heat up big pot on medium and put in the oil for about 3 min.
  2. chop up garlic and onions and throw into the pot
  3. stir the garlic and onions then put in the ground turkey
  4. stir and mix so the turkey is not so chunky
  5. sprinkle some pepper and cook for about 4 minutes
  6. cut the zucchini into small chunks and put in the pot
  7. stir again for about 2 minutes
  8. put in the chicken broth
  9. pour about 3 quarts or less of water, stir for a minute
  10. cover and leave on medium for about15-20 minutes
  11. put vermicelli noodles in the pot and carefully mix well for about 1-2 minutes
  12. cover for about10 mintues
  13. check to see if noodles are slighty clear and soft but not mushy
  14. add more pepper and chicken broth if prefer
