Ingredients

  • 4 (4oz) boneless, skinless chicken breasts
  • 2 teaspoons butter
  • 2 teaspoons olive oil
  • 2 cans fire roasted diced tomtatoes, no added salt (OR- 5 Roma tomatoes, cut in quarters)
  • 6 garlic cloves
  • the juice of 6 lemons (depending on the size of your lemons- Mine were HUGE, so I stuck with 6.)
  • 2 teapoons fresh oregano, or 1 teapoon dried
  • 1/2 teaspoon salt
  • pepper to taste
  • 8 ounces whole wheat egg noodles, cooked to package direction- omitting salt and fat
  • Fat: 7.1 g
