Me, I disagree with the whole thing about Valentines Day being a “Hallmark” holiday. I don’t see it as a day that is about buying a giant heart shaped pillow or a giant box of chocolate. For me, its a a day to show some extra love to the ones in your life that mean a whole lot to you. I am a lucky lady that not only has a wonderful husband to celebrate with but our two boys too! Oh and lets not forget the most delicious part of Valentines Day, dessert!! I made these Mini Strawberry Cheesecakes and they are the perfect sweet treat to share with your love {or just to make on a random day because they are yummy!}.

I love that these are personal sized rather then a whole big cheesecake. They are adorable and fun! The crust is simply graham cracker crumbs and some melted butter. The filling is delicious thanks to a fresh strawberry syrup that is added the the traditional cheesecake filling ingredients; creamy goodness! I topped each with whipped cream and some cute heart sprinkles. I will note that I cheated and used store bought whipped cream but I’ll tell ya, the stuff flattened out really quickly. Next time I will definitely remember to pick up whipping cream and make my own!

Mini Strawberry Cheesecakes

Instructions

Preheat oven to 350 degrees.

In a pot, over medium low heat, add the strawberries, water and sugar. Cook down until thickened to the consistency of jam. Be sure to stir occasionally to prevent burning. Cool completely.

In a small bowl, stir together the melted butter and graham cracker crumbs.

Press the graham cracker mixture into the bottom of 12 cupcake liners in a cupcake pan. Using a shot glass or something similar, press the crust firmly down.

In a large bowl add the cream cheese, eggs, powdered sugar, heavy cream and the cooled strawberry mixture.

Using a hand mixer, mix until well incorporated, smooth and creamy.

Pour the mixture into the cupcake liners, as evenly as possible.

Bake for approx. 16-18 minutes until the filling is mostly set. Cool Completely. Top with whipped cream and some sprinkles.
