Ingredients
- 2 (8 ounce.) Packages cream cheese, softened
- 3/4 c. sugar
- 2 Large eggs
- 1 tbsp. lemon juice
- 1 tbsp. vanilla
- Vanilla wafers
Directions
- Fill cupcake liners with 1 vanilla wafer each. Combine the rest of the ingredients. Beat till light and fluffy. Fill liners 3/4 full. Bake at 375 degrees for 15-20 min. When cold, top with 1 can of favorite pie filling, fresh fruit or possibly shaved chocolate. Makes 24.
