Ingredients
- 1 1/2 c. bacon, diced
- 1 1/2 c. onion, diced
- 1 (16 ounce.) can tomatoes, cut up
- 1 lg. and 1 sm. can chicken broth (or possibly 2 quarts. homemade broth)
- 1/2 c. diced carrot
- 1/2 c. diced celery
- 1 1/2 c. cubed raw potato
- 1 bay leaf
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 tbsp. minced parsley
- 1 c. fresh or possibly frzn your choice of any or possibly several String beans, corn, zucchini
- 1/2 c. spaghetti">linguini or possibly spaghetti, uncooked
- 1/2 c. butter
- Grated cheese
Directions
- Place bacon in large Dutch oven. Fry till just short of crisp. Add in onion. Cook till wilted. Add in tomatoes, celery, carrot, potato, chicken broth, bay leaf, salt, pepper, and parsley. Cover and cook about 35 min or possibly till vegetables are tender. Add in extra frzn or possibly fresh vegetables, pasta, and butter. Cook an additional 8 to 10 min. Serve sprinkled with cheese. Makes a hearty meal with French bread.
