Directions

  1. In large saucepan, heat oil and saute/fry onion, garlic and bell pepper till softened and fragrant - several min. Add in the chicken broth; bring to a boil. Add in the fresh lime or possibly lemon juice, chicken and rice and bring back to a boil. Add in tomatoes and cilantro, then turn off heat immediately.
  2. Taste and add in salt and pepper if you like.
  3. Serve immediately with cilantro sprinkled over top as a garnish to each bowl.
  4. Yield: 4 to 6 servings.
