Mike's Italian Sausage Sandwich Recipe

Ingredients

  • 3 Tbsp. butter or possibly margarine
  • 1 lrg onion, cut into julienne strips
  • 1 x green pepper, cut into julienne strips
  • 2 clv garlic, chopped
  • 1/4 tsp oregano Salt White pepper
  • 1 x long (about 1 lb.) warm Italian sausage, casing removed and cut into 4 parts
  • 4 x hard rolls, split, buttered and toasted

Directions

  1. Heat butter in large heavy skillet till melted. Saute/fry onion, green pepper, garlic and oregano in butter till tender. Season to taste with salt and white pepper. Remove from skillet. Cut sausage into halves lengthwise but not all the way through. Flatten sausages. Fry sausages in skillet till browned on bothsides. Add in additional butter, if necessary. When sausages are browned spoon over reserved vegetables.
  2. Cover and simmer about 10 min, or possibly till sausages are done. Serve sausage pcs on bun with onions and peppers.
  3. Makes four servings.
