Microwave Stuffed Green Peppers

Ingredients

  • 4 lg. green peppers
  • 1 pound grnd beef
  • 1/2 c. minced onion
  • 1/4 c. minced celery
  • 1 (6 ounce.) can tomato paste
  • 1 c. cooked rice
  • 1/2 teaspoon seasoned salt
  • 1 med. clove garlic, chopped

Directions

  1. Cut tops off peppers. Chop the tops and set aside. Core and seed the peppers, then place cut side up in a microwave 8 x 8 inch baking dish. Crumble beef into plastic colander placed over a microwave safe casserole dish. Add in onion, celery and minced pepper. Microwave on full power 4-6 min, stirring once halfway through. Drain well.
  2. Transfer meat mix to a bowl and add in tomato paste, rice, salt and garlic. Mix well and fill peppers with mix. Cover dish with plastic wrap. Microwave on full power 8-11 min, rotating dish once, halfway through.
