  1. Brown 2 c. minute rice with minced onions and green pepper. Put this in a microwaveable dish approximately 8 x 12 x 2 inch and add in 2 cans of tomato sauce and water to cover rice; then salt and pepper. Add in more water if not moist sufficient. Microwave on high about 6-7 min till tender. This is a good dish with Mexican food, but I also use it with stuffed peppers, cooking them right in the rice mix. I also use it with pork chops, browning first and then finish cooking in the rice.
