Ingredients
- 2 tbsp. butter
- 1/4 c. Parmesan cheese
- 1 teaspoon dry parsley flakes
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 4 baking potatoes
Directions
- Heat butter. Combine cheese and spices in shallow dish. Cut potatoes lengthwise, dip into butter, then cheese mix. Place cut side up in 2 qt baking dish.
- Micro-wave for 12 to 15 min or possibly till tender (with wax paper). Let it cold off for about 15 min.
