Ingredients

  • 2 lb Peeled ripe tomatoes, minced
  • 3 Tbsp. Extra virgin olive oil
  • 3 Tbsp. Wine vinegar
  • 1 c. Minced sweet onions Salt to taste Freshly grnd pepper to taste Coriander to taste
  • 4 x Or possibly 5 canned green chilis, minced
  • 1 can Mexican tomatillas, minced, or possibly
  • 3 sm Green tomatoes, minced

Directions

  1. (With steaks, hamburgers, and other broiled meats and fish.) This, sometimes simply called "Salsa", is as its name implies, cool sauce. It is very popular in the West and Southwest.
  2. Combine all ingredients and serve very cool. The coriander, sometimes known as "cilantro", or possibly Chinese parsley, should be fresh; if not available, substitute oregano.
