Southwestern style meatball Subs that have just a little bit of a kick :)
Ingredients
- 2 lbs hamburger
- 2 eggs, beaten
- 1 c crushed tortilla chips
- 1 1/2 c salsa, divided
- 2 T vegetable oil
- 1 c spaghetti sauce
- 4-6 crusty rolls or sub buns
- pepperjack cheese; shredded or sliced
Directions
- Combine hamburger, eggs, and tortilla chip crumbs. Mix in 1/2 c of salsa. Form into 1" balls, fry until browned in oil in skillet over medium-high heat.
- Combine remaining salsa with spaghetti sauce, add meatballs, and heat through.
- Toast buns, spoon in meatballs. Add cheese to top, bake until melted.
