Mexican Lasagna

One of the The Husband’s favorite dishes is lasagna, so this month I decided to make lasagna for him with a Mexican twist. I have to say, it was delicious. This might just become my new favorite! This is a recipe that can easily have ingredients added or taken away depending on what you or your family like. No matter, how you personalize it, a crowd pleaser it will be!

Ingredients

  • 12 soft corn tortilla shells
  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 2 cups shredded cheddar/colby jack cheese
  • 1 jar (16 ounces) salsa
  • 1 cup black olives, sliced

Directions

  1. Brown ground beef. Just before you have browned in completely, add the taco seasoning and stir to mix thoroughly. Drain off any fat if needed. Spray a 9×11 baking dish with cooking spray. Line the bottom of the pan with 6 of the corn tortillas (they will overlap). Spoon all of the meat mixture on top of the tortilla layer, top with 1 cup of shredded cheese. Place the remaining 6 tortillas on top of the cheese layer. Pour the entire jar of salsa on top of the tortillas, spread evenly. Sprinkle the remaining 1 cup of cheese evenly over the salsa and place the olives on top of the cheese. Bake uncovered for 25 minutes until bubbly and hot all the way through. Let sit a few minutes before cutting.
