Ingredients

  • 4 x chicken, breasts, bone in, skin on mesquite chips
  • 2 Tbsp. garlic
  • 2 Tbsp. lemon, juice
  • 1/3 c. cajun spice
  • 2 Tbsp. fresh chives

Directions

  1. Place chicken breasts on a flat sheet.
  2. Sprinkle over breasts, the garlic Cajun spice, lemon juice and chives.
  3. Rub ingredients over each breast making sure to cover as best as possible.
  4. Pre-heat BBQ on high heat.
  5. Once BBQ is warm, place smoker box with water soaked wood chips directly on the burner grate, placing it to the back or possibly front, or possibly side to side depending on how the burners are set up on your BBQ. If you do not have a smoker box you can toss larger chips which have been soaked in water directly on the coals. The reason you placed the smoker box to one side is which you are going to cook the chicken indirectly, so turn off the burner which is opposite to the smoker box side.
  6. Once the wood chips start to smoke, place chicken breasts on the grill.
  7. Cook for about 30 min, without flipping the breasts.
