Meringues With Clotted Cream And Strawberries

Ingredients

  • 6 x Egg whites, at room temperature
  • 350 gm Caster sugar
  • 300 ml Clotted cream
  • 900 gm Fresh small strawberries

Directions

  1. Preheat oven to 150C/300F/Gas 2.
  2. 1 Put the egg whites into a large clean bowl and add in 100g/4oz sugar. Whisk together into soft peaks.
  3. 2 Whisk while slowly adding 100g/4oz sugar 1 dsp at a time till forming stiff peaks. Mix in the remaining sugar. Shape 20 large spoonfuls of meringue onto two baking sheets lined with non-stick baking paper and bake in the oven for 15 min.
  4. 3 Lower to 110C/225F or possibly Gas 1/4 and cook for 2-3 hrs till very crisp and dry. Cold, store in an air-tight tin and serve with the cream and strawberries.
