....%20I%20did%20a%20little%20change%20in%20the%20recipe;%20instead%20of%20baking%20twice%20to%20glue%20mushroom%20cap%20and%20stem,%20I%20used%20melted%20chocolate%20to%20glue%20the%20mushroom%20caps%20and%20stem.%20Check%20out%20Nicole's%20For%20the%20Love%20of%20Food%20blog%20for%20an%20awesome%20video%20on%20how%20to%20make%20Meringue%20Mushrooms.%3C/p%3E%3Cp%3EMeringue%20Mushrooms%3C/p%3E%3Cp%3E(From%20Joy%20of%20Baking)%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E1/2%20cup%20(100%20grams)%20superfine%20(caster)%20white%20sugar%20(if%20you%20don't%20have%20superfine%20sugar%20simply%20take%20granulated%20white%20sugar%20and%20process%20it%20for%20about%2030%20seconds%20in%20a%20food%20processor).%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3ELine%20two%20baking%20sheets%20with%20parchment%20paper.%20Have%20two%20pastry%20bags%20ready%20(one%20for%20piping%20the%20caps%20and%20stems%20and%20one%20for%20gluing%20them%20together).%20Fit%20one%20small%20pastry%20bag%20with%20a%20number%203%20(1/16%20inch%20diameter)%20(.2%20cm)%20round%20plain%20tip%20(used%20to%20glue%20the%20stems%20and%20caps%20together)%20and%20one%20large%20pastry%20bag%20with%20a%20number%206%20(1/2%20inch%20diameter)%20(1%201/4%20cm)%20round%20plain%20tip%20(for%20stems%20and%20caps).%20Fold%20down%20the%20tops%20of%20the%20bags%20to%20form%20a%20deep%20cuff%20on%20the%20outside%20and%20place%20each%20bag%20in%20a%20tall%20narrow%20glass%20for%20support.%20This%20will%20make%20it%20easy%20to%20transfer%20the%20meringue%20to%20the%20pastry%20bags.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20200%20degrees%20F%20(100%20degrees%20C)%20and%20place%202%20oven%20racks%20in%20the%20upper%20and%20lower%20thirds%20of%20the%20oven.%3C/p%3E%3Cp%3EIn%20bowl%20of%20electric%20mixer,%20at%20moderately%20slow%20speed,%20beat%20the%20room%20temperature%20egg%20whites%20until%20foamy.%20Add%20the%20cream%20of%20tartar%20and%20beat%20at%20medium%20speed%20until%20soft%20peaks%20form.%20Continue%20beating%20(increasing%20speed%20to%20high),%20gradually%20adding%20the%20superfine%20sugar,%20until%20the%20whites%20are%20very%20stiff%20and%20glossy.%20(You%20want%20to%20make%20sure%20that%20the%20sugar%20has%20dissolved%20completely%20-%20to%20test%20rub%20a%20little%20of%20the%20meringue%20between%20your%20fingers.)%3C/p%3E%3Cp%3EWith%20a%20rubber%20spatula%20place%20approximately%201/4%20cup%20of%20the%20meringue%20in%20the%20pastry%20bag%20with%20the%20small%20tip%20(used%20to%20glue%20the%20caps%20and%20stems%20together).%20Place%20the%20remainder%20of%20the%20meringue%20in%20the%20large%20pastry%20bag.%3C/p%3E%3Cp%3ETo%20Pipe%20Caps:%20Holding%20the%20pastry%20bag%20upright%20and%20close%20to%20the%20parchment%20paper,%20pipe%20the%20meringue%20with%20even%20pressure,%20into%20even%20rounds%20building%20up%20the%20meringue%20to%20form%20a%202%20inch%20(5%20cm)%20round%20that%20is%20about%201%20inch%20(2.5%20cm)%20high.%20Sharply%20twist%20the%20bag%20and%20stop%20the%20pressure%20as%20you%20slowly%20move%20the%20tip%20off%20the%20meringue.%20Try%20to%20make%20the%20top%20as%20smooth%20as%20possible%20but%20use%20a%20wet%20fingertip%20to%20smooth%20out%20any%20bumps.%3C/p%3E%3Cp%3ETo%20Pipe%20Stems:%20Holding%20the%20pastry%20bag%20upright%20and%20close%20to%20the%20parchment%20paper,%20pipe%20the%20meringue%20with%20even%20pressure,%20into%20a%20cone-shape,%20making%20the%20base%20of%20the%20stem%20a%20little%20larger%20than%20the%20top.%20The%20stem%20should%20be%20about%201%20inch%20(2.54%20cm)%20high.%20Try%20to%20keep%20the%20stems%20as%20straight%20as%20possible.%20Some%20of%20the%20stems%20may%20fall%20over%20on%20their%20sides%20during%20baking,%20so%20it%20is%20a%20good%20idea%20to%20make%20extra.%3C/p%3E%3Cp%3EBake%20the%20meringues%20for%20approximately%20one%20hour,%20or%20until%20the%20mushrooms%20are%20firm%20enough%20that%20they%20can%20be%20lifted%20from%20the%20baking%20sheet%20without%20sticking.%20Rotate%20the%20baking%20sheets%20from%20top%20to%20bottom%20and%20front%20to%20back%20(about%20three%20quarters%20of%20the%20way%20through)%20to%20ensure%20even%20baking.%3C/p%3E%3Cp%3ERemove%20from%20oven%20and%20with%20a%20small%20sharp%20knife,%20make%20a%20small%20hole%20in%20the%20middle%20of%20the%20underside%20of%20each%20mushroom%20cap.%20Using%20the%20small%20pastry%20bag%20fitted%20with%20the%201/l6%20inch%20tip,%20pipe%20a%20little%20bit%20of%20meringue%20in%20the%20hole%20and%20gently%20press%20the%20top%20of%20the%20stem%20into%20the%20hole.%3C/p%3E%3Cp%3EPlace%20the%20mushrooms,%20caps%20down,%20on%20a%20parchment%20lined%20baking%20sheet%20and%20return%20to%20oven%20for%20about%2015%20-%2030%20minutes,%20or%20until%20the%20mushroom%20are%20dry.%20Remove%20from%20oven%20and%20lightly%20dust%20the%20tops%20of%20the%20mushrooms%20with%20cocoa%20powder.%20Use%20a%20small%20pastry%20or%20paint%20brush%20to%20smudge%20the%20cocoa%20powder,%20if%20desired.%3C/p%3E%3Cp%3EStore%20in%20an%20airtight%20container%20for%20several%20weeks.%3C/p%3E%3Cp%3EMakes
