Ingredients
- 2 c. mashed, cooked sweet potatoes
- 1/2 c. brown sugar, firmly packed
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 4 egg yolks
- 1/3 c. melted butter
- 2 c. lowfat milk
- 4 egg whites
- 9 inch unbaked pie shell
Directions
- Combine sweet potatoes, sugar, salt, cinnamon and nutmeg. Beat egg yolks; add in with butter to potato mix. Mix well. Add in lowfat milk and combine. Beat egg whites stiff but not dry; fold into the mix. Pour into unbaked pie shell. Bake in warm oven (425 degrees) for 15 min. Reduce heat to moderately warm (375 degrees) and bake 25 min longer, r or possibly till hard. Cold. Makes 6 servings.
