Ingredients
- 1/2 c. diced watermelon
- 2 Tbsp. currant jelly
- 2 Tbsp. white wine vinegar
- 1 tsp vegetable oil
- 1/4 tsp garlic pepper
- 6 c. washed salad greens
- 3 c. cubed, seeded watermelon
- 1/2 c. sliced onion
- 1/3 c. crumbled feta cheese
Directions
- Prepare vinaigrette: Puree melon in blender. Pour through strainer to remove seeds. In small pan, heat jelly just till melted; let cold. Add in melon puree, vinegar, oil and garlic pepper. Refrigeratetill ready to use.
- In a large bowl, combine salad greens, melon cubes, onion and cheese. Shake dressing to recombine, pour over salad and toss.
