Meatless Meatball Sub Recipe

This is a great substitute for meat. Still all the flavors of onions, garlic and sauce even the parmesan and mozzarella. The meaty part is the pecans, it may seem unusual but these truly turned out fabulous.

Directions

  1. Preheat overn to 350 degrees.
  2. Prepare a 9x13 glas baking dish with cooking spray.
  3. Process the pecasn in a food processor and pout into a large bowl.
  4. For the bread crumbs I toasted 8 slices sprayed with olive oil, salt and garlic powder (ended up using only 6 slices, maybe because they were large slices) of Italian bread in the over at 250 for about 20 minutes and turning them over half way through.
  5. Add the bread crumbs to the pecans along with the rest of the ingredients.
  6. Stir with a fork until very well blended or you can mash with your hands if you like.
  7. When mixture is fully mixed start rolling into 2 inch balls. If the mixture is sticky sparay your hands with cooking spray.
  8. I didn't need to do that, they rolled out easily. Now place in the oven and bake for 40 minutes.
